This academic article determined the management of one of the most destructive risks present in industries, namely fire risk. The objective was to assess fire risk using the NFPA 1600:2013 and MESERI methodologies to prevent structural damage and human losses at the food processing company “La Picantina” in the parish of San Buenaventura, Latacunga Canton, Cotopaxi Province. Through risk assessment and corrective actions, structural damage and human losses will be prevented and a safer working environment will be achieved. To determine the level of risk to which each area was exposed, the NFPA 1600:2013 and MESERI assessment methods were used to analyze factors specific to the facilities that contribute to the occurrence of a fire. The results show that there are moderate and unacceptable risks in the raw material warehouse, the production area, and the finished product warehouses, while the only area that maintains a low risk is the administrative area. For this reason, a fire emergency plan that complies with current regulations is presented, which sets out the functions and actions to be carried out in the event of this risk, thus providing the best possible response to such an incident. Finally, training in fire risk prevention is proposed, complementing preventive actions with the adaptation of signage for the different risks in each area.
