This research analyzes the importance of implementing a structured risk control protocol in the production processes of food companies located in the Guaranda canton. Therefore, adequate risk management becomes a key factor in ensuring product quality, protecting consumer health, and guaranteeing the safety of personnel involved in operations. However, it was identified that many local companies have deficiencies in both technical and structural aspects, which limits their capacity to anticipate or react adequately to situations that could compromise their operations or institutional image. In view of this situation, there is a need to analyze the importance of implementing a formal protocol, based on current regulations, to enable more effective, organized and sustainable risk management. The research adopted a qualitative approach and used as its main method the bibliographic review of academic, technical and normative sources focused on risk management within the productive environment. This methodology allowed the comparison of different theoretical approaches and the analysis of previous experiences that support the importance of having structured tools for risk control. The results obtained indicate that this type of management should not be approached as a one-time action, but should be integrated into an organizational strategy that includes continuous training, legal compliance and active participation of personnel. In conclusion, this work represents a significant contribution to the improvement of safety, prevention and sustainability in the local food sector. This is why protocols should be a priority in companies so that their results are efficient and allow workers to better perform their daily.
